VineyardOur vineyard is a beautiful place, elevated, north facing with wide pastoral views. The beauty of the place sets the tone for what we want to achieve here. This is a property that has the terroir necessary to make great wine.The fifty acre property has covenanted areas of native bush, open pasture and 17 acres of north facing vines. The vines are optimally placed to get full sun to both sides of the vine for consistent ripening in a long temperate growing season. While being protected from harsh winds there is ample breeze to help keep the vines ventilated and dry. The number of varietals has been limited to what is best suited to our microclimate - Chardonnay, Syrah and Bordeaux style reds, Merlot, Malbec and Cabernet Sauvignon. Only grapes grown on the property are used in our wines. The vines were planted in 1998 in a hard red clay with no artificial irrigation. This ensures these vines have to work hard and root deeply to draw water and nutrients to produce concentrated full and complex flavours. With the vines coming into their prime we use a severe pruning method that leaves only two short canes with limited buds, our objective being quality over quantity of fruit. WineryAll of our wines are made on site using traditional techniques. Our winery is on the same level as the restaurant and separated only by a glass window. You can watch us at work while enjoying a meal at the restaurant and during vintage can come and help us with plunging the reds before dessert. |
